Roy Rogers Filet Mignon Jerky

I was really impressed with this jerky. The textures of this jerky is really nice. It is cut across the grain and right at 5mm thick. It is not soft are crumbly and it is not hard like shoe leather. It is very similar texture to how we produce our jerky. The cut of meat is very unique for jerky and I think it very unnecessary but does produce a good product. I think they could produce just a good of jerky with a lessor cut of meat but this is my first time trying filet mignon jerky and it was really good. I did not like all the fat on the pieces or the texture of the fat and that is probably my only big complaint about the jerky.  The flavor profile is a lot of soy sauce but not too much. There is some smoke flavor but I believe it is done with liquid smoke because it doesn’t taste like jerky that has been smoked in a smoker. All of the flavors come together nicely and nothing over powers the other.  I give this a craft beef jerky stamp of approval. This is good jerky that is not standard generic jerky.
